Mixed Fruits Butter

This recipe is a great way to use up overripe, bruised and 'ugly' bits of fruit or help you use up a glut of fresh fruit that you may have grown yourself.

Ingredients

Servings: 16
Makes:
For the fruit butter
400 g apple, quartered, skin on
170 g raspberries
50 g blueberries
75 g strawberries, whole
100 g plums, roughly quartered, no need to de-stone
70 g water

To finish (optional)
  honey, as needed
1-2 Tbsp chia seeds


Instructions

STEP 1/2

Add apples, raspberries, blueberries, strawberries, plums and water into a medium saucepan
Cover with a lid
Heat over a high heat for 5 minutes until boiling
Remove the lid, stir and reduced the heat
Cook over a medium heat for 25-30 minutes until the fruit is soft enough to crush with a wooden spoon and the liquid has almost evaporated
Transfer the cooked fruit into a large mixing bowl
Set aside and let cool completely

STEP 2/2

Fit the Fine Milling Disc, smooth side up, to the Food Mill attachment
Attach the 7L Mixer bowl to the machine
Assemble the Food Mill attachment to the machine, fit the Paddle Tool
Transfer the cooled fruit into the attachment
Stir on speed Min for 30 seconds
Stir on speed 1 for 2 minutes
Scrape the sides of the Food Mill with a spatula
Stir on speed 1 for 1 minute
Remove the attachment from the machine
Use a spatula to scrape the puree from the underside of the screen and transfer to the 7L Mixer bowl
Discard any solids left in the Food Mill attachment

 

To Finish
To thicken the puree, add chia seeds and stir to combine
To sweeten the puree, add honey or sweetener and stir to combine

 

Serve
Store in a jar or airtight container in the fridge for 5 days, or freeze for up to 3 months

 

Substitutions
Honey can be replaced with sweetener
